Sure, you can pull your knitting back and start again, but there's an easier way: If you have one too many stitches, just k2tog (knit two stitches together) and keep going. If you are missing a stitch, just make a stitch (such as kfb, or M1L) in a less noticeable area (such as under the arm or near the side of your project).
